This is something I have only recently started making. I love seafood, all kinds of seafood, I had a shellfish allergy I would be miserable. I cook, tilapia, salmon, crab legs, mussels, clams, and now scallops regularly. Fish is so easy to cook whether you bake it, broil it, steam it or grill it and it always tastes delicisous….the possibilities are endless. And the best part….all that protein, little of no fat and little or no carbs. Delicious and diet friendly!!
Ok here it is, a quick and easy way to please your palate for dinner.
Scallops: as many or as little as you want.
Lemon juice – about 2 tablespoons
Butter- (I use smart balance) about 2 tablespoons
Seasoning can be whatever you want. I use lemon pepper mix, or pepper and paprika, you could use garlic salt but I try to avoid salt as much as I can.
Place scallops in shallow pan
Top with seasonings, butter and lemon juice.
Broil for 5 minutes, flip scallops, broil another 5 minutes. I broil them on high.
That’s it, 10 minutes!! So quick, so simple, so delicious. Sure to please all the seafood lovers in your family.
